Aiming high should include enhancing our food choices to select the foods that will make us feel good AND give us energy. Studies have shown that different foods have different energy levels, from those that vibrate slowly (animal products) to those that vibrate more quickly (plant food). Vegetables have the highest vibration, followed by fruits, then living/sprouted grains, legumes and nuts. This colorful salad is a perfect combination of high-energy foods with a variety of flavors that merge well together. Feel the vibration!!!

4 cups baby spinach
1 mango, seeded, peeled and thinly sliced
1/4 small red onion, thinly sliced
2 -3 Tbsp slivered almonds, toasted

2 Tbsp green onion, finely chopped
1/4 cup white wine vinegar
2 tsp jalapeño, finely minced
1 tsp sesame oil (I like toasted sesame oil)
2 tsp lime juice
1 tsp maple syrup

Whisk together dressing ingredients in a bowl, cover and refrigerate for at least 30 minutes. Heat in saucepan to warm dressing, and then pour over salad.
