Sweet Pea Guacamole
Guacamole is a staple food as far as I am concerned! But, with the traditional version, I could eat most of my daily allowance of fat in one sitting! Replacing sweet peas for avocado works surprisingly well and is delicious; I love them both!
1- 16 ounce bag of frozen peas, dethawed
3 firm roma tomatoes,diced
1 bunch of cilantro, chopped
1 jalapeno pepper,seeded and finely diced
1 shallot, finely diced
2 cloves of garlic, minced
Juice of one lime
pinch of cumin
Put peas in a food processor and blend until smooth. Transfer to bowl and stir in remaining ingredients.
