Sweet Potato Succulence

Red onion, diced

Garlic, two cloves, chopped

Red pepper, diced

Sweet potato, one large, peeled and diced

Tempeh, one package, cubed

Fresh basil, one large bunch

Curry, 1 TBSP

Soy sauce, 2 TBSP

Coconut or rice or soy milk, 1 cup

Saute the tempeh in coconut or canola oil; set aside. Over medium heat, saute the onion with vegetable broth until soft. Add peppers and garlic. Add curry. Cook for five minutes. Add sweet potato, and stir for another five or ten minutes, coating with curry mixture.  Add milk, soy sauce. Stir.   Simmer on low heat for 20 minutes, until potatoes cooked through. Add tempeh and toss in as much fresh basil as you like.

Serve over cooked brown rice. I dare you not to go back for seconds!!
